Also my first encounter with bearnaise sauce, not a good one). I love Cobb Salad, But I dislike avocados. Those soapy fat bits do nothing for me. So maybe, despite four-generation credentials, I’m not Californian after all?

My challenge is finding good recipes that I can make for dinner when I get off of work that are healthy and tasty.Recently, I roasted a chicken and then made stock from the bones and made soup! Growing up in Sydney in the 60s, we had a lovely tall avocado tree in our back garden. My father grew it from a stone he planted on the grave of our cat Zipper who died, and it shot up like Jack’s beanstalk, thanks to Zipper, I’m sure. Avocados were still rather exotic in Australia then, so we were thought to be quite progressive! Finally, I decided to try to cook the grains SEPARATELY from the soup. When the soup is basically done, I then add the pre-cooked grains and it made a HUGE difference! I was 8 years old, living in Portland, Oregon in1953 when I ate at “The Prime Rib”, (didn’t know the name at the time) on Sandy Blvd. Apparently it was, and maybe still is, a deliberate copy of Lawry’s. The first time I ate at Lawry’s in Los Angeles (in the 60s) it seemed identical to my 1953 experience in Portland and I just assumed that the Portland restaurant was also a Lawry’s. Thanks for the correction. My brother and I often revisit the Portland experience in our memories and could never figure out what happened to the Lawry’s where we remembered eating.I recently conquered the challenge of making homemade pasta! I can’t remember one of them. The other is my own kitchen!

My most recent challenge is preparing meals without the use of an oven. Mine was only working occasionally and now it has quit completely. My slow cooker and microwave are getting a workout.My challenge…YEAST…….I have started to work thru the challenge. Pretzel buns and a Yeast dough torte, the last two items made. The first dough for the torte never started to rise, redid and it was perfect. The key is the water temperature.

The biggest cooking challenge I’ve mastered lately is getting my family (including myself) to eat a variety of new recipes. I’ve tried different meals we wouldn’t normally like, and we’ve ended up loving a few!I have recently taken on the challenge to make my own pizza! I have been making no knead bread for a while, so I thought I’d try to make pizza with no knead pizza dough. Not only did I dare to make my own dough, but I made my own sauce, too! And it was delicious – even my picky eater husband loved it; burned his tongue devouring it too quickly.

A recent cooking challenge I had to overcome were my diet restrictions – I don’t eat sugar/fruit/nuts and grains during the week, but I didn’t want to only stick with one type of meal per week (chicken with veggies and lentils, that’s the usual, haha). Cobb salad originates from southern California dating back to the 30s, and I think it definitely says something that it has stuck around so popularly since that time. Since Cobb salad has been around so long, there are tons of different versions, but this is the collection of ingredients that I like the best..

At the age of 69, I am trying to teach myself how to fry chicken and how to make good chicken and dumplings (like my mother used to make). I cook for my grandsons and they love chicken. My husband never liked chicken so I never cooked it. I am getting pretty good with the dumplings;not so much with the fried chicken.

I gave proportions that I used which you can use as a guideline but it’s a salad, not a science project, so you can add a little more of this, and a little less of that.I invited my in laws over for dinner for the first time and was nervous because my father in law is notoriously picky. I decided to make lasagna, one of his faves, but to do something different I used a vodka sauce. I also used whole wheat pasta and skim mozzarella and ricotta cheeses but he didn’t even notice. It came out a lot better than i thought it would, and my fil said I’d have to make it when we have our big family dinners.

I love using my KitchenAid mixer to make whipped topping, homemade banana pudding and other great desserts. Can’t wait to take on the challenge of finding new and exciting holiday desserts for my family to enjoy.My biggest challenge right now is gluten free baking…i just can’t get the results i want with gluten free flours no matter what i do! I am not defeated yet though…i will keep trying! LOL :-) Lucky for me there are plenty of people blogging about it to help the rest of us…it is great!
